b'Golf grew, and that has allowed us to grow as well, said Jeff Simonds, the resorts assistant general manager and senior director of operations. We saw that growth locally. That means the Bandon Dunes courses are busy throughout the summer, but also most of the winter as well. A specific menu has not yet been finalized for the new Ghost Tree Grill, currently named after the iconic tree that is visible from much of the Old Macdonald course. We know we need something that is complementary to (McKees) Pub, Simonds said.Rory Butts, the resorts executive chef, said the new restaurant will have more seating than the pub, maybe 160 to 180 total seats, and be able to serve larger groups. The resort has tried to fill some of the demand this summer with a new food truck located at the resorts practice center. Charlottes specializes in barbecuebrisket and porkcooked in a wood-fed smoker and is open in the afternoons and evenings Thursday through Sunday, matching the hours of the nine-hole Shortys par-3 course at the practice center.Fittingly, both are named after a family with deep ties to the resort. Shorty Dow was the first caretaker for the property, and Charlotte his wife. Charlottes follows the rebranding of The Gallery restaurant a year ago into The Forge, a steakhouse that has proven popular with its Oregon-grown beef and pork and fresh seafood dinners, as wellThe resort is adding more housing to its staff village as the expansion of outside seating on the patioon the north end of the property.at the main lodge. Bandon Dunes is in the midst of a bunch of other construction, though that is away from the view of the golfing community, rather helping with another challenge: housing for resort staff in a time when not much is available given the current housing market on the South Coast. Bandon Dunes purchased a former Christian camp south of the city of Bandon and is renovating its dorms. The resort also added to the collection of small houses at its staff village near the resort and is in the planning stages for two apartment buildings on that site. The housing is important given the labor force required to make Bandon Dunes tick. When fully staffed, the resort has between 650 and 700 full- and part-time employees, not including the 500 or so caddies, who are licensees.
